Abstract

The proposed study focuses on carrying out a bibliographical review of food legislation, specifically on the labeling of foods of animal origin, with an emphasis on the analysis of labels of chicken products from different commercial brands in relation to the standards established by the industrial and Sanitary Inspection Regulation of Products of Animal Origin (RIISPOA), as described in Decree No. 9,013 of March 29, 2017, and its updates. Food labeling legislation in Brazil is regulated and monitored by bodies such as the National Health Surveillance Agency (Anvisa), the Ministry of Agriculture, Livestock and Supply (Mapa) and the National Institute of Metrology, Quality and Technology (Inmetro). This new legislation aims to provide clear and complete information to consumers, including nutritional tables and front labeling. The objective of the study is to evaluate the compliance or non-compliance of chicken product packaging labels with current regulations. The food industry must comply with these regulations to ensure transparency in the information provided to consumers. The expected conclusion of the study is that the adoption of new regulations by the food industry will result in clearer and more informative labels, allowing consumers to correctly understand the nutritional information present in food products of animal origin, such as chicken.
